Spinach Artichoke Mac N Cheese

WOW! I just couldn't resist myself. I HAD to share this recipe. This is one of Rachel Ray's Top 10 Recipes of the Year. They all sounded good so this has been my mission this week to make them ALL! I have included the link for the recipe. I did make one minor adjustment to make it more "figure friendly." It calls for 2 cups of milk and I used 1 cup of Chicken Stock and a 1/2 cup of skim milk. It tasted delicious and packed full of nutrients from the whole wheat penne pasta, artichokes, and spinach!
